When it comes to our taste here at the GM studio, it’s no secret that we love all things bright and colorful—and our desserts are no exception! This summer heat is going strong and we are constantly looking for the next best frozen treat to keep our cool (without all the calories). With that said, what better way to beat the heat than with a few bright and cheery sprinkle ice pops made with hydrating coconut water? We’ve been loving this fresh and simple recipe as of late, and we can’t wait to share it with you. (Not to mention, those rainbow sprinkles are the cutest boost to brighten any stressful workday!) Let’s get to it…

Coconut Sprinkle Popsicles

What You’ll Need:

  • rainbow sprinkles (we recommend Jimmies sprinkles to avoid color bleeding into your pops)
  • coconut water (or another low-calorie liquid of your choice)
  • Popsicle mold
  • Popsicle sticks

Directions: 1. Start by pouring a spoonful of rainbow sprinkles into the bottom of each empty popsicle mold. Remember: Like we mentioned above, don’t forget to choose your rainbow sprinkles carefully, as some types of sprinkles will bleed color when they come in contact with your liquid! We recommend using sprinkles like these ones for the best result.

  1. Take your liquid of choice (we recommend something clear or light in color, so you can better see the colorful sprinkles after they’re frozen), and carefully pour into each popsicle mold, until almost full—leave about a quarter of an inch of space for the remaining sprinkles to be added later. After you’ve added the first layer of sprinkles and your liquid, pop the molds into the freezer until halfway frozen (usually about 3 hours). 3. Remove from the freezer, add another layer of sprinkles on top of your liquid in each popsicle mold, then return the tray to the freezer for another few hours until your pops are frozen solid. Last, remove the popsicles from the mold and enjoy!
