Hi everyone! In case you missed it, I’ve shared a number of tips and tricks on the blog all about how to keep up with a healthy lifestyle, and even how to whip up a low-cal cocktail to kick back and relax—sans all the unnecessary calories. Well, in light of the release of our new cocktail serving trays, I’m back with an update on the next best cocktail to try if you’re needing a little tropical getaway, all while keeping your calories in check.

I’ve dubbed this recent favorite my “skinny piña colada,” and I can’t wait to share the recipe with you all. I’ve been sipping it on all my recent vacations and I have to say, it is everything you could want in a tropical cocktail—refreshing, hydrating, and easy on the cals. ( Bonus tip: It is best served in a real coconut if you’re aiming for some serious tropical vibes.) With that said, let’s get right into the recipe so we can get sipping…

Ingredients:

  • Coconut water (either drained from coconut or store-bought)
  • Light rum
  • Fresh limes
  • Whole coconuts (for serving)
  • Crushed or shaved ice
  • Tropical flowers and lime slices for garnish

The How-To:

  1. Start by opening up your whole coconut. To do this, locate the three dots that naturally appear on one end of your coconut. Take a screwdriver, and place the pointed tip over one of the holes. Using a hammer, drive the screwdriver through your coconut to create a hole, and drain the coconut water into a cup.

  2. Once you’ve drained your coconut, wrap it in a lightweight kitchen towel and slowly turn it while you hammer the coconut all the way around the center. Repeat this step until you can see a crack around the middle of your coconut, and split it open.

Tip: Make sure after opening your coconut that you only pour your cocktail into the half that doesn’t have the hole left from your screwdriver. If you’d prefer to use both halves of the coconut, simply crack it open without draining first (but be aware this will make a big mess, so prepare beforehand or do it outside!).

  1. Once you’ve got your coconut halves set up, fill each one to the top with crushed ice. Then, in a separate mixer, mix together your coconut water with two parts rum and a splash of lime juice (about ½ lime per coconut).

  2. Once your mixture is combined, pour over your crushed ice and add garnish of your choice for a dreamy tropical drink on the rocks! And don’t forget to serve up your cocktails on one of our brand new serving trays for an even beachier feel.
