As you may have noticed by now, I’m dedicating this summer to all things fitness and health (or at least healthier than usual!). I’ve been trying to make small lifestyle changes that I can stick to, and it’s actually been a pleasant surprise to see how sustainable these changes are. I started by learning a few workouts at home, but I’m sure we’ve all heard before that good physical fitness isn’t all that matters when it comes to staying healthy. In fact, in my experience, I’ve learned that wellness starts in the kitchen! That being said, since I am kicking pizza to the curb this summer, I wanted to find a fun alternative (with a sweet twist). Those pizza cravings always seem to sneak up on me, and next time they do, I want to be reaching for something a little healthier than that carb-loaded cheesy bread. I decided to put a twist on the traditional slice and make Watermelon Pizza, 3 Ways. To be honest,

I was shocked at how delicious these variations were and how, after a few guilt-free slices, I had totally forgotten about real pizza (and refined-sugar-laden desserts too, for that matter). I can’t wait for you guys to try these recipes yourself, so here we go…

STRAWBERRY BANANA NUT PIZZA

Strawberry Banana Nut Pizza Strawberry Banana Nut Pizza on Watermelon

This watermelon pizza was such a refreshing take on my craving. Not to mention, all that’s needed for this recipe is a few simple ingredients and a little slicing and dicing. Oh, and the best part? No bake time! Honestly, it doesn’t get any better than that. When I’m hungry, waiting for something to cook in the oven is just not an option. Here’s what you’ll need for this watermelon pizza recipe… Ingredients :

  • 1 Seedless Watermelon
  • Vanilla Greek Yogurt
  • Fresh Strawberries
  • Fresh Bananas
  • Walnuts
  • Chia Seeds

Watermelon Pizza, 3 Ways: Strawberry Banana Nut

Directions:

  • Slice your watermelon into round slices, about 1 to 1 ½ inches thick.
  • Top the entire watermelon base with the vanilla Greek yogurt, to your liking.
  • Slice your strawberries and bananas (whether you want just a few slices on your pizza or a heap of toppings, the amount is up to you).
  • Lay your fruit toppings on the yogurt, evenly spread to cover the pizza.
  • Sprinkle with walnuts and chia seeds. And enjoy!

CHOCOLATE DRIZZLED BERRY PIZZA

Chocolate Drizzle Berry Pizza

Okay so this one might not kick the craving for something salty, but it more than suffices when I’m craving something sweet. And it requires even less ingredients than the previous pie, so this is my go-to when I’m in a hurry and need a quick and healthy snack. Here are the ingredients you’ll need… Ingredients:

  • 1 Seedless Watermelon
  • Fresh Berries (I used fresh strawberries as well as blueberries and raspberries that I had put in the freezer for about an hour)
  • Chocolate Sauce

Directions: This one is just as easy as it looks: Simply slice your watermelon into 1 - 1 ½ inch slices, top with berries of your choice, and drizzle with chocolate to sweeten it up. A couple of things to note:

  • We used strawberries, raspberries, and blueberries but you can get creative with your selection.
  • We used regular chocolate sauce, but for an even healthier alternative, this vegan chocolate mint drizzle is a great option.

TROPICAL WATERMELON PIZZA

Tropical Watermelon Pizza Recipe This one is perfect for when I’m dreaming of laying on a beach somewhere tropical. It’s almost like a deconstructed smoothie, and I love the tangy toppings we added on this watermelon pizza—the flavors contrast so well with the subtle and sweet taste of the watermelon. Here’s what you’ll need to make it… Ingredients:

  • 1 Seedless Watermelon
  • Coconut Yogurt
  • Fresh Kiwi
  • Fresh Pineapple Spears or Chunks (not canned)
  • Coconut Flakes

Watermelon Pizza, 3 Ways: Tropical

Directions:

  • Slice your watermelon into 1 – 1 ½ inch slices to use as your base or “crust.”
  • Spread the coconut yogurt evenly across the watermelon base.
  • Peel and slice your fresh kiwi, and slice your pineapple into small chunks and add on top of the coconut yogurt.
  • Top with coconut flakes as desired and enjoy!

These recipes were beyond easy to make, and were honestly so fresh, light, and totally guilt-free. The best part is, when it comes to pizza (even of the watermelon variety) there are literally endless combinations of toppings to add, so you’ll never get bored.
